Perched at 765 m above the Nesque valley: the land of lavender and nougat.

Built in a semicircle on a rocky spur, Sault looks down over the Nesque valley, facing the Ventoux. In summer the plateau all around turns purple with lavender: distilleries, growers and fields can be visited. The Wednesday market has been held since 1515, and André Boyer's nougat is famous far beyond Provence. It is also the start of the gentlest climb up the Ventoux.
The longest and gentlest: a lavender plateau, a moderately sloping forest, a long flat stretch, then the last 6 kilometres of the Bédoin route. The best for a first time.

Surrounded by the lavender fields of the pays de Sault, this family-run distillery shows how plants become essential oils: free museum spaces, guided tours and workshops for young and old. Tours also in English and German.

On the Sault plateau, at around 800 m, fine lavender and lavandin are grown. Fine lavender flowers mainly in the first half of July, lavandin from mid-July to mid-August. Every 15 August, the Sault lavender festival draws tens of thousands of visitors.
